An ancient tea from Yunnan whose earthy pleasures are treasured by some. Pu-erhs are the only truly ferment teas and they are made in the remote Yunnan Province, where the first tea plants were found. For the traditional method (aka green, raw, and sheng), the tea leaves are made and then stored. Then naturally occurring yeasts react with the the dry tea leaves, creating new and changing aromas and flavors. The process is reminiscent of that used to make sourdough bread, but instead of hours, it can take years, or even decades! For this Pu-erh, the aging and fermentation process has sped up by the use of "wo dui" (the moist track). Made in China, the oxidized leaves are piled into a heap in moist rooms, where the fermentation process is accelerated. This tea can brewed several times, but for each additional brew, please lest the tea steep an extra 15-30 seconds.Â
